Prosciutto Joystyxs
Wrap with paper thin slices of prosciutto
6 Paper thin slices of Niagara Prosciutto
24 Red Fred Joystyxs
Cut each slice of prosciutto, lengthwise, in 1/2" strips. Wrap each strip around
one end of each Joystyxs. Present in a large glass, small vase or Mason jar. Enjoy!

White Bean Puree
Makes about 1 cup
1 - 14 oz tin white beans.
drained and rinsed
1 clove garlic, peeled
2 TB olive oil
3 TB hot water
Juice and zest of 1/2 lemon
1/4 tsp each salt, cumin & pepper
Place all ingredients, except zest & pepper in blender and blend till smooth.
Stir in zest and pepper. Season to taste. Serve immediately or refrigerate.

Roasted Tomato Fennel Soup
Makes about 4 cups
Preheat oven to 400F
2 pints cherry tomatoes
1 lrg onion peeled and cut in 1/8ths
1/2 red pepper, cored, cut in 1/4's
6 cloves peeled garlic
1/4 bulb fennel, cut in 1/8ths
2 TB olive oil
1/2 tsp ea. Salt and pepper
2cps low sodium chicken, beef or veg stock
Toss all ingredients, except stock together on parchment lined tray, roast 30 minutes
or until tender and just beginning to brown.
Place in blender with stock (lid ajar if ingredients are hot) and puree till smooth.
Season to taste. Serve hot or chilled.
